1.5 pounds chicken breast, skinless cubed1 zucchini, cut into 1-inch cubes1 bell pepper, red, cut into 1-inch pieces1 red onion, cut into 1-inch pieces4 garlic cloves, minced or pressed1/4 cup olive oil3 tbsp lemon juice1 tbsp red wine vinegar2 tsp ground oregano1 tsp ground thyme1/4 tsp cuminSalt and pepper to taste
Basil Sauce
2 cups fresh basil leaves3 cloves garlic, minced or pressed1/3 cup olive oil1/2 tsp crushed red pepper flakessalt, to taste
Place cubed chicken in a bowl and vegetables in a separate bowl.
Whisk together olive oil, lemon juice, vinegar and dried herbs. Add two tablespoons of olive oil mixture to the vegetables in bowl and toss. Add remaining olive oil mixture to cubed chicken in a bowl and toss. Cover and place both bowls in refrigerator for up to 2 hours. (You can marinate in less time, but it will have less intense flavor.)
Preheat grill to medium heat (or grill pan on stove top). Alternate seasoned vegetables and chicken on skewers (if using wooden skewers, soak in water first to prevent burning on the grill). Season with salt and pepper.
Grill, rotating until all sides are slightly browned, chicken is cooked to 165 degrees Fahrenheit and vegetables have softened. Meanwhile, mix up basil sauce in food processor and serve skewers with basil sauce as a dipping sauce.
You can grill these skewers outdoors or on a grill pan. You can also broil them, rotating during cooking.
