Make Ahead Bruschetta Topping
Got stale bread? Make Bruschetta (broo-sket-ta).
Bruschetta is crusty, grilled bread that’s been brushed with olive oil and garlic. This recipe is a delicious way to reduce your food waste:
It’s a great way to use stale bread, but you can certainly use fresh.
This topping makes use of ripe tomatoes that you might have left on the counter.
It’s a very adaptable recipe that allows you can make a small or large batch, depending on what you have on hand.
Fresh garlic and a salt-free herb blend can add more flavor to this DASH friendly recipe. If you don’t use this topping for bread, you can top chicken with it. Simply top 4 boneless, split chicken breasts with the mixture, cover with foil and bake for 40 minutes.

Servings 4 servings Author Rosanne Rust MS RDN, www.rustnutrition.com 1-1/2 cups chopped, ripe tomatoes3 tbsp basil, chopped or 2 tsp dried1-2 cloves garlic, minced1 tbsp minced onion optional1 tsp herb blend or any salt-free blend3 tbsp tbsp olive oil1 tbsp balsamic vinegarsalt and pepper to tasteMix tomatoes, basil, garlic and herbs. Drizzle with olive oil and vinegar and combine.
Refrigerate for at least 30 minutes or up to a day.
To serve, place a spoonful of mixture onto toasted bread slices. Garnish with grated parmesan if desired.
To make the bruschetta. Slice crusty bread into 1/4-inch thick slices. Lay the bread in a single layer, onto a baking sheet. Brush each slice with olive oil and rub with garlic clove (or sprinkle with garlic powder). Toast until lightly browned. Top with tomato topping.
